June 7th Low Carb Menu

8am
2 large cups of organic coffee with milk

10am
green beans
organic chicken thigh and drumstick

2pm
seven coconut herb buns with butter and cream cheese ( I would say the equivalent of 2 sandwiches)
1.5 cups of plain organic yogurt

6pm
romaine salad with organic chicken meat and mozzarella cheese (sauce from leftover chicken)

10pm
1 avocado
1 cup of organic milk with 2 teaspoons of coconut oil
handful of almonds

Note:
I really was not hungry at 10pm but I had realized that I hardly had any potassium rich food today. I really hate leg and muscle cramps due to this deficiency so I grabbed these foods to eat to prevent them. I have learned that Candida Yeast infections inhibit the absorption of vitamins and minerals and therefore it is imperative to eat high quality and mineral rich foods.

June 6th Low Carb Menu

8am
2 large cups of organic coffee with milk

9am
3 organic eggs with mozzarella cheese topped with green onion
1.5 cups of organic yogurt

1pm
5 meatballs (probably made with some grains)
1 cup fried potatoes
salad greens with a curry dressing (was sweet with sugar)

(eeks - not candida friendly, but nevertheless it was delicious)

7pm
1 avocado
1 cup of lacto-fermented fruit
roasted organic chicken drumstick
green beans with vitamin rich yellow butter
plain romaine salad

Note:
We did not end up eating lunch at home and therefore my lunch also ended up feeding my candida. Some unexpected events happened (neighbours doggy was sick and I was looking after it) and I was not able to prepare alternative foods for lunch.

I will also have some coconut oil tonight.

6:30pm
1/2 cup of lacto-fermented fruit (pineapple, orange, apple, ginger, whey, salt and rapadura sugar). The sugars are digested by the fermentation. There was hardly any sweetness to this batch. I had hoped my kids would like it, but there was a very strong ginger flavour so they hated it.

Pork Stew meat with the ginger peanut sauce from yesterday's dinner.

cooked heart

Note:
This is the first time that I had pork heart. I have eaten chicken hearts and beef heart before (the beef heart was cut up for me in smaller pieces). However when I looked at the pork heart it looked very life like as if it could be a human heart. I was feeling sentimental at the fact that this organ was what gave life to this pig and I was holding it in my hand. I gave thanks to the life that was sacrificed for me to feed my family.

I did not have much of an appetite today. My stomach was feeling unwell. The feelings have passed now that it is evening.

(I ate this because while driving home from a friends house I got a huge muscle cramping in my right foot. This is not good when you are driving with that foot. I had to take off my shoe and massage the foot a bit but it was still cramping up. Muscle cramping is most likely a potassium deficiency. I will make sure that I am eating more mineral rich foods and just eating more. While on a low carb diet my appetite does drastically decreases and I actually have to force myself to eat 3 meals.)

May 9th Low Carb Menu

Yesterday we had a plumbing mishap and our water had to be turned off. I never got to finish washing my dinner pots (yesterday's) so today I had no cookware to make anything. The plumbing took much longer today to fix than what we had anticipated, so I ate very late. The kids were happy to eat fruit with nut butters and sandwiches. I hate being in a messy kitchen so I just stayed out of it. Jonas (my dh) made me my lunch today :)

11am
1 cup of coffee with milk

4pm
3 organic eggs, slice of mozzarella cheese, green beans, left over pork chop, 1/2 of an avocado, cucumbers w/ cream cheese and 3 radishes.

9pm
1 almond crepe with cheese (this one was all broken up crepe in pieces)
1 almond crepe with spinach, salsa and cheese
2 cups of decaf green tea with stevia

(this dinner really did not turn out. The almond crepes kept falling apart on me. I also thought that I had spaghetti sauce in the house but I did not. I used salsa instead. It would have been a lot better with the spaghetti sauce. I used to make spinach crepes for my kids before going low carb and it was one of their favorite ways of eating spinach. I tried to replicate my recipe but failed)

Exercise:
I was still feeling a bit nauseated today so my only exercise was a 45min brisk walk. After eating the kefir I felt much better - my nausea almost completely went away and my appetite came back.

May 5th and 6th Low Carb Menus

The whole family caught a stomach bug over the last few days. My husband even took a day of work and that is almost unheard of. There has not been much eating around here.

On Tuesday I only had breakfast
3 eggs and a bowl of low carb breakfast porridge. It was in the afternoon that I started to feel the nausea come on.

On Wednesday I had to get something in my tummy just to quench the hunger pangs. I would have loved to just have had some toast and butter but I opted for a raw red pepper.

Still feeling not a 100% but got breakfast in me this morning.

Having my daughter up most of the night really wore me out. I suggested we go for a walk but she was feeling lethargic and did not want to go. We just sat out in the sun to get our vitamin D. No exercise today.

May 3rd Low Carb Menu

Note: I missed posting yesterday's menu. My daughter got sick just before her bedtime and ended up having a sick stomach throughout the night. I was very worried about her. She was throwing up every 10-15 minutes. I tried giving her probiotic powder and she threw that up. We tried giving her tea and that would not stay down either. I resorted to oil of oregano and then she was able to sleep for about 1hr lengths until 3am. She then got solid sleep from 3am till 7am.

She is doing much better today and she was able to eat a small amount of food.
